Easy 2-Ingredient Healthy Banana Bread Pancakes

Equipment

  • 1 large mixing bowl
  • immersion blender or food processor
  • cast iron skillet or stainless steel pan
  • spatula for flipping
  • rubber spatula
  • ladle for scooping batter

Ingredients

  • 2 large pasture raised eggs
  • 1 large ripe or overripe banana
  • grass fed butter as needed (for cooking on the skillet)

Instructions

  • In a large mixing bowl, combine eggs and bananas with an immersion blender, or blend in a food processor until a smooth batter is formed.
  • Heat your high quality butter on a large skillet on medium heat. The butter is ready when it is bubbling, but not browning too much.
  • Once butter is preheated, scoop or pour batter from large bowl and create your desired size pancake.
  • Cook for about 1 minutes on one side, or until you can see bubbles all over the pancake, then flip and continue cooking on the other until both sides are golden brown. Don't try to flip it if it's not easily coming up with a spatula!
  • With a spatula, carefully remove skillet cakes from pan and place onto serving plate
  • Repeat as needed to cook all of the batter. Use a rubber spatula to get all of the batter out of the bowl.
  • Add butter and other desired toppings!
