Ingredients
Homemade Blueberry Sauce (Makes About 2 Servings)
2/3cupfrozen or fresh blueberries
1/3cupmaple syrup
1/2tspvanilla extract
1pinchsalt
Iced Blueberry Coffee (For Each Cup of Iced Coffee)
1/3cupblueberry sauce
3/4cupice
1/2cupmilk or half and half (plus more to taste)
2shotsespresso
Instructions
Add blueberries, maple syrup, vanilla extract, and salt to a small pot. Heat on a stove set to medium heat.
Bring to a simmer and let cook for about 5 minutes, stirring frequently.
Remove pot from heat and pour blueberry mixture into a metal container, then transfer to the refrigerator or freezer to allow to cool until it reaches about room temperature.
Blend cooled blueberry compote in a high speed blender until smooth.
Make a double shot of espresso and set aside.
Add about 1/3 cup of blueberry sauce to the bottom of a glass.
Add about 3/4 cup of ice.
Add about 1/2 to 3/4 cup (to taste) of whole milk or half and half.
Top with a double shot of espresso.
Admire the beautiful layers, then stir and enjoy with a straw!
