Homemade Blueberry Iced Latte (Healthy Coffee Recipe)

Ingredients

Homemade Blueberry Sauce (Makes About 2 Servings)

  • 2/3 cup frozen or fresh blueberries
  • 1/3 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1 pinch salt

Iced Blueberry Coffee (For Each Cup of Iced Coffee)

  • 1/3 cup blueberry sauce
  • 3/4 cup ice
  • 1/2 cup milk or half and half (plus more to taste)
  • 2 shots espresso

Instructions

  • Add blueberries, maple syrup, vanilla extract, and salt to a small pot. Heat on a stove set to medium heat.
  • Bring to a simmer and let cook for about 5 minutes, stirring frequently.
  • Remove pot from heat and pour blueberry mixture into a metal container, then transfer to the refrigerator or freezer to allow to cool until it reaches about room temperature.
  • Blend cooled blueberry compote in a high speed blender until smooth.
  • Make a double shot of espresso and set aside.
  • Add about 1/3 cup of blueberry sauce to the bottom of a glass.
  • Add about 3/4 cup of ice.
  • Add about 1/2 to 3/4 cup (to taste) of whole milk or half and half.
  • Top with a double shot of espresso.
  • Admire the beautiful layers, then stir and enjoy with a straw!
