Ingredients
Quick Homemade Horchata (Enough for 2 Servings)
1/2cupwhite rice
3cupsfiltered water
1cinnamon stick
1cupwhole milk(substitute with 1/2 cup water for dairy free)
1/4cupmaple syrup
1/2tspvanilla extract
1pinchsalt
Iced Latte (1 serving)
1cuphomemade horchata
1/2cupice(plus more if desired)
2shotsespresso
1sprinkleground cinnamon(optional)
Instructions
Quick Homemade Horchata (Enough for 2 Servings)
Combine rice, 2 cups of the filtered water, and the cinnamon stick in a small pot. Bring to a boil, then lower the heat, cover, and let and simmer on low for 20 minutes.
Remove from heat and let cool to about room temperature.
Remove the cinnamon stick and transfer the rice to a high speed blender. Add 1 cup of filtered water and blend until smooth.
Strain the mixture through a fine sieve or cheesecloth into a large bowl.
Stir in milk (or 1/2 cup of water for dairy free), maple syrup, salt, and vanilla extract until well combined.
Store in the refrigerator until you're ready to make lattes!
Iced Horchata Espresso Latte (1 Serving)
Add 1 cup of homemade horchata to the bottom of your serving glass.
Layer 1/2 cup of ice over horchata, plus more if desired.
Pour 2 shots of espresso for the final drink layer.
