How to Make Armenian Cucumber Salad (Easy Recipe)

This Armenian cucumber salad recipe is refreshing and delicious, with crisp cucumbers and bright herbs. It pairs perfectly alongside spiced grilled meats to make a hearty and refreshing meal, or can be enjoyed any time of day!

Equipment

  • Salad forks or other utensils for tossing salad

Ingredients

  • 2 English, small Armenian, or regular cucumbers
  • Juice of 2 lemons
  • 1/2 cup fresh mint
  • 1/4 cup fresh parsley
  • 1 grated or finely chopped garlic clove
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp apple cider or red wine vinegar
  • 1 tsp maple syrup (optional, adds a little sweetness and cuts bitterness)
  • 1/4 cup extra virgin olive oil OR substitute plain Greek yogurt/skyr

Instructions

  • Add garlic, salt, pepper, olive oil OR yogurt, lemon juice, vinegar and maple syrup to a large bowl and whisk to combine.
  • Peel cucumbers
  • If using regular cucumbers or Armenian cucumbers, scrape out center seed area by slicing cucumbers in half lengthwise and removing the "seed goo" with a small spoon. If using English or Persian cucumbers, you can leave the seeds if you like.
  • Slice your cucumbers into quarters lengthwise, and slice those pieces into about 1/2 cm pieces width-wise.
  • Add sliced cucumbers to large bowl with other ingredients.
  • Finely chop herbs and add to large bowl
  • Add optional add-ins listed in post
  • Toss all ingredients with salad forks to combine
  • Top with sumac or feta cheese
  • Serve in small salad bowls and enjoy!
