Old Fashioned Amish Style Creamy Baked Custard Recipe

Old fashioned baked custard is a delicious classic dessert that is made with eggs and milk. This Amish baked custard recipe is unique because it is made with homemade maple sweetened condensed milk, giving each creamy bite a rich caramelized flavor. Not only is it more rich in flavor than many other types of custard, it is also more healthy!

Equipment

  • 1 large baking dish with high sides
  • 1 bread pan or multiple custard cups
  • 1 Large Bowl
  • 1 whisk
  • 1 hand mixer
  • 1 high speed blender

Ingredients

Egg Custard

  • 3 large eggs
  • 7 oz maple sweetened condensed milk (see below)
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Maple Sweetened Condensed Milk

  • 3 cups whole milk
  • 1 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • pinch salt

Instructions

Make the sweetened condensed milk

  • Add whole milk, maple syrup, and vanilla extract to a large pot and cook on medium low for about 1 1/2 to 2 hours, stirring occasionally, until it has reduced to about 1/3 of the original amount.
  • ​Allow to cool to room temperature.
  • Discard the top later of film, and blend sweetened condensed milk mixture in a high speed blender to smooth it out.

Make the Amish Baked Custard

  • Preheat oven to 325 degrees F
  • Add milk, sweetened condensed milk, vanilla extract, and salt to a large pot set to medium heat or medium low heat. low. Stir frequently to ensure it does not burn on the bottom or form a film on top.
  • While milk is heating up, add eggs to a large bowl and whip with a hand mixer until fluffy.
  • When milk begins to steam, add about 1/4 cup at a time to the egg mixture, stirring constantly.
  • Once you have added half of the hot milk mixture to the egg mixture, add the rest of the hot milk mixture while stirring.
  • Pour into desired baking containers (custard cups or a larger baking dish) and set aside
  • Bring water to a boil.
  • Place a larger pan with high sides in the preheated oven.
  • Pour boiling water into pan in oven until it reaches about 1/2 inch high.
  • Place baking dishes with custard mixture into the pan of water in the oven.
  • Bake for about 1 hour, or until a knife comes out clean when inserted into the center of the custard.
  • The bake time will vary slightly depending on the size baking dish used, so make sure to check frequently after 45 minutes if using small custard cups.
  • Remove custard from oven and allow to cool for 1 hour before serving.
  • Serve at room temperature or chilled with toppings of choice.
