Spiced Sweet Potato Butter with Apple: Easy Recipe

1 Instant pot, slow cooker, and/or large heavy bottomed pot
1 immersion blender or high speed heat proof blender
1 airtight storage container (pint jar works well)
Ingredients
4medium sweet potatoespeeled sand cut into 1 inch cubes
1applepeeled and chopped
1/2cupcoconut sugar
1teaspoonpumpkin pie spice
1teaspooncinnamon
1teaspoonvanilla extract
1/4cupmaple syrupplus more to taste if desired
1cupfiltered water for Instant pot method, or enough water to cover in steaming in a pot on the stove
Instructions
Instant Pot Method
Pressure cook sweet potato pieces, apple pieces, sugar, water, spices, and vanilla on high for 15 minutes and allow to release naturally.
Remove lid and use an immersion blender or transfer to a high speed blender to puree sweet potato mixture until smooth.
Add sweet potato puree back to the instant pot and slow cook on low for 2 hours or until it reaches a thick a creamy consistency.
Add extra maple syrup for more sweetness if desired.
Let cool to room temperature, then transfer to an airtight container.
Slow Cooker Method
Add sweet potato pieces, apple pieces, sugar, spices, and vanilla to a heavy bottomed pot.
Cover with water and bring to a boil. Once boiling, reduce to a simmer and cover the pot with a lid. Let simmer for 15 minutes.
Once sweet potatoes are very soft, use an immersion blender or transfer to a high speed blender to puree sweet potato mixture until smooth.
Transfer sweet potato puree to a slow cooker and slow cook on high for 3 to 4 hours, or until it reaches a thick a creamy consistency.
Add extra maple syrup for more sweetness if desired.
Let cool to room temperature, then transfer to an airtight container.
Stove Top Only Method
Add sweet potato pieces, apple pieces, sugar, spices, and vanilla to a heavy bottomed pot.
Cover with water and bring to a boil. Once boiling, reduce to a simmer and cover the pot with a lid. Let simmer for 15 minutes.
Once sweet potatoes are very soft, use an immersion blender or transfer to a high speed blender to puree sweet potato mixture until smooth.
Turn the stove top on low and cook sweet potato puree down, keeping the lid ajar, for 1 hour stirring occasionally. Cook on low for an additional 30 minutes stirring frequently so it doesn't burn on the bottom, until it reaches a thick a creamy consistency.
Add extra quarter cup maple syrup (or more to taste) for extra sweetness if desired.
Let cool to room temperature, then transfer to an airtight container.
