Equipment

  • 1 high speed blender
  • 1 rubber spatula

Ingredients

  • 4 hard boiled eggs, cooled and peeled
  • 1/4 cup maple syrup
  • 1/3 cup whole milk
  • 2 tablespoons cocoa powder
  • 1/4 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  • Add hardboiled eggs, cocoa powder, maple syrup, milk, vanilla extract, and salt to a high speed blender.
  • Blend until very smooth, stopping to scrape this sides occasionally as needed.
  • If it is not blending smooth, add more milk a teaspoon or so at a time until it is blending properly.
  • Taste to ensure it is sweet enough, and add a little more maple syrup if needed.
  • Place blender with pudding in it in the refrigerator and allow to rest for at least 1 hour. This will chill the pudding and allow any remaining "hard boiled egg" flavor to dissipate.
  • Remove the blender from the refrigerator and give the pudding a quick blend before serving.
  • Distribute into serving dishes and add desired toppings.
  • Enjoy!
