The smell of Sulphur may be released into the air when blended, but the taste will not remain in the pudding once it cools.

Maple Syrup:

Maple syrup gives this homemade pudding recipe a natural sweetness that pairs beautifully with the bitter notes of dark chocolate. 

Whole Milk:

Milk adds a creamy flavor and allows the egg to be blended smooth by adding a small amount of liquid.

Cocoa Powder:

 Natural cocoa powder adds a rich chocolate flavor to this pudding recipe. Regular cocoa powder or dutch-processed cocoa powder both work well. Cacao can be used, but keep in mind it will not have as rich of a flavor. 

Vanilla Extract:

How to Blend This Pudding Properly

It is important to use a high speed blender such as a Vitamix to make this pudding – a food processor will most likely not work well in creating a creamy texture. If you are struggling to get the eggs to blend well, simply add a splash or two more of milk!

Can Other Types of Sweeteners be Used ?

I don’t recommend using any kind of granulated sugar like white sugar or coconut sugar in this recipe, as it will be grainy and not creamy in the end result.

​Honey also probably will not work well in this recipe because it is may not blend well, and the honey flavor profile might take away from the chocolate notes.

I recommend using only maple syrup if possible, as it also adds to the moisture content of this recipe.

How to Store This Easy Homemade Chocolate Pudding 

Store in an airtight container in the refrigerator for up to 3 days. When ready to enjoy, be sure to give it a quick blend as some separation and settling occurs over time.

Keep in mind that this recipe makes about 2 servings, so multiply the qualitity as needed. It is also very filling because of its high protein content, so a little goes a long way!

My favorite way to enjoy a bowl of chocolate pudding is chilled and with freshly whipped cream and shredded chocolate chips on the top of the pudding!

How to Make Easy Homemade Chocolate Pudding

Add hardboiled eggs, cocoa powder, maple syrup, milk, vanilla extract, and salt to a high speed blender. 

Blend until very smooth, stopping to scrape the sides occasionally as needed. 

If it is not blending smooth, add more milk a teaspoon or so at a time until it is blending properly. 

Taste to ensure it is sweet enough, and add a little more maple syrup if needed. 

Place blender with pudding in it in the refrigerator and allow to rest for at least 1 hour. This will chill it and allow any remaining “hardboiled egg” flavor to dissipate.

Remove the blender from the refrigerator and give the pudding a quick blend before serving. 

Distribute into serving dishes and add desired toppings.

  • 1/3 cup whole milk
  • 2 tablespoons cocoa powder

  • 1 pinch salt
