This high protein pudding recipe is made with three simple ingredients – eggs, milk, and maple syrup. With this pudding base you can make delicious vanilla protein pudding, protein chocolate pudding, or banana protein pudding for a sweet and healthy snack!

This Pudding Recipe is Different 

Most high protein pudding recipes call for different flavors of protein powder or instant pudding mix – but not this one. This recipe uses whole food ingredients instead of whey protein powder, vegan protein powder, or other powders. Low carb protein powders can often have questionable ingredients and can sometimes be difficult to digest. By using eggs, this recipe creates a healthy serving of protein and a rich, deliciously sweet treat!

What Kind of Eggs are Used in This Recipe?

You might think this sounds a little strange, but to make this creamy pudding we are blending hard boiled eggs! I thought it sounded odd – until I tried it for the first time. I honestly enjoy it just as much as (if not more than) traditional pudding!

The following ingredients make this recipe healthy and high protein:

Eggs: Eggs are naturally packed with nutrition. They are one of my favorite foods because of the unique nutritional content, containing A,D,E,K, and B vitamins, as well as an abundance of minerals.

They are a complete protein, containing about 6 or 7 grams of protein per average size egg, and also provide healthy fats like DHA and EPA.

Remember to buy pasture raised eggs whenever you can – or raise your own chickens! Healthier chickens create healthier and more nutrient dense eggs. 

Eggs are such a versatile ingredient, I love finding new ways to use them, with the many cooking techniques they can be prepared with. One of my new favorite ways to use eggs is to make healthy mayonnaise with hard-boiled eggs. Check out this potato salad recipe to see an example of this method!

Maple Syrup: Maple syrup is a natural sweetener that can be a healthy carbohydrate when enjoyed in moderation. Unlike refined sugar, it has not been stripped of its nutrients including B vitamins, antioxidants, and a variety of minerals. Many protein powders include artificial sweeteners and highly processed sugar alcohols, stevia, or monk fruit extract, which I don’t believe are particularly healthy. 

Optional Flavors

There are a variety of ways to flavor this high protein pudding. My favorite way is to add cacao powder or cocoa powder for a chocolate protein pudding, as well as vanilla for additional flavor.

Creamy chocolate pudding is the perfect healthy way to satisfy any sweet tooth! Make sure to monitor your chocolate consumption, as chocolate can contain high levels of heavy metals. See my favorite brand of cacao powder linked below, who has their cacao products lab-tested for contaminants.

A great way to boost the flavor of healthy dessert recipes is to add a pinch of salt – a little salt really brings out the richness and sweetness of desserts. 

How to Store High Protein Pudding

A great way to have something healthy and sweet on hand is to make this pudding ahead of time during your meal prep, then store it in a glass airtight container in the refrigerator.

You can store it in the refrigerator for up to 4 days. I don’t recommend freezing this pudding, as it might effect the texture. If you do decide to freeze it, you may want to whip it with an electric hand mixer once it thaws. 

When to Eat High Protein Pudding

You can enjoy this pudding any time of day! It makes a great breakfast, post-workout snack, or dessert. If you are sensitive to caffeine, avoid eating a chocolate flavored pudding late at night. 

How to Make 3 Ingredient High Protein Pudding

Add hard boiled eggs, maple syrup, milk, and any other optional ingredients to a high-speed blender. I recommend adding vanilla extract and salt to all 3 pudding flavor options for extra flavor.

Blend on high, until it has reached a creamy consistency. This may take a couple of minutes. Make sure to blend well for a creamier pudding. 

 You may notice a bit of a Sulphur smell from the eggs – don’t worry. The smell disappears and is not tasted in the final product. 

With a rubber spatula, carefully transfer pudding into an airtight container or containers of individual serving sizes. 

Allow pudding to chill in the refrigerator for about an hour or two. This will also ensure the Sulphur smell has escaped from the blended eggs.
